Nannie's Corn Fritters


garden
2 eggs, separated
2 Tbl. milk
2 Tbl. flour
1/2 tsp. salt
1 16-oz. can of cream-style corn

1. Beat egg yolks until thick (lemon-colored).
2. Combine milk, flour and salt to make a smooth paste.
3. Blend into beaten egg yolks.
4. Stir the corn into that mixture.
5. Beat egg whites until stiff but not dry.
6. Gently fold into corn mixture.
7. Drop by tablespoons on hot griddle.
8. Fry til brown over medium heat.
9. Flip over and brown other side.

Cook's Comments :
This recipe makes 50 delicious 2-inch fritters.
