Dad's Favorite: Pineapple Upside-Down Cake!


grandaddily
1/3 cup margarine
1 cup brown sugar, firmly packed
1 can pineapple slices, drained (save liquid)
Small jar of cherries
1 pkg. white or yellow cake mix (1 layer)

1. Preheat oven to 325 degrees.
2. Melt margarine in baking pan over low heat.
3. Add brown sugar and stir until disolved.
4. Arrange pineapple and a few cherries in pan.
5. Prepare cake mix, using leftover juice and water.
6. Fill pan 3/4 full and bake 30-40 minutes.
7. It's done! (edges begin to pull away from sides)
8. After baking, run knife around edges to loosen.
9. Wait a minute. Then invert cake on serving plate.

Cook's Comments :
This was my husband's favorite birthday cake. I usually used a 2-layer cake mix package because I always baked two cakes. One was for my husband and one was for the rest of us!

The child's drawing is my husband as "Grandaddily!"
